Beef: Healthy Hamburger Pasta Hot Dish


  • 8 oz. extra-lean ground sirloin beef or turkey breast
  • 1/2 cup chopped onion
  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped celery
  • 1/2 cup shredded carrots
  • 1 (10 3/4-oz.) can Healthy Request Tomato Soup
  • 1 tsp. dried parsley flakes
  • 1/3 tsp. black pepper
  • 2 cups hot cooked rotini pasta

Tips

  • Usually, 11/2 cups uncooked rotini pasta cooks to about 2 cups.
  • For an even healthier dish, use at least some whole-grain pasta.

FREEZABILITY
Two to three months.

Preheat oven to 375 degrees. Spray an 8-by-8-inch baking dish with butter-flavored cooking spray.

In a large skillet sprayed with butter-flavored cooking spray, brown meat, onion, green pepper, celery, and carrots. Stir in tomato soup, parsley flakes, and black pepper.

Place half of rotini pasta in prepared baking dish. Spoon half of meat mixture over pasta. Repeat layers. Bake for 20 to 25 minutes.

Place baking dish on a wire rack and let set for five minutes. Divide into four servings.

4 servings; each: 250 calories, 6 g fat (sat. fat not published separately), 255 mg sodium, 3 g fiber.
